Madeline Hissong, a seasoned culinary professional with over two decades in the industry, is the founder and co-owner of Damn Fine Hand Pies, a popular catering bakery specializing in both sweet and savory hand pies. After launching the business on her own in 2021, she spent two years building its reputation before bringing on a business partner to help grow the venture. Since then, Damn Fine Hand Pies has earned a loyal following across the St. Louis region for its inventive flavors, attention to detail, and commitment to quality.

A graduate of Le Cordon Bleu College of Culinary Arts in St. Peters, Missouri, Ms. Hissong earned her Associate of Applied Science in Culinary Arts and Related Services in 2016. Her career has included roles as sous chef at Juniper, line cook for the acclaimed Niche Food Group, kitchen manager at Knead Bakehouse, and an internship at the Michelin-recognized restaurant Vie.

Her ability to blend traditional techniques with creative flair has garnered recognition across the culinary landscape. She was named among Taste Makers and Industry Innovators in 2024 and listed as one of Saint Louis Ones to Watch in 2020. Her creations have also earned the distinction of Best Bite in Saint Louis, reflecting the city’s embrace of her unique approach to hand pies.

On June 1, 2025, Damn Fine Hand Pies celebrated one year in its brick-and-mortar location on Shaw. Looking ahead, Madeline Hissong remains focused on expanding the business and introducing more people to her signature style. With a foundation rooted in excellence and innovation, she continues to raise the bar in the regional food scene—one hand pie at a time.
